Easter Weekend 2023

We had a really sweet Easter weekend. We celebrated with friends and as a family - baking, egg hunting, dyeing eggs, and church + brunch.
We were invited to a friend's house to celebrate and I jumped at the opportunity to make an Easter bunny cake. Probably not the best one ever but the kids and I had fun making him, and he tasted delicious!

It was a beautiful weekend to be outside and enjoy all the fun activities! I'm pretty sure we'll be eating egg salad and deviled eggs, and candy, for a couple weeks. But the kids had such a great time with their friends enjoying the holiday weekend.

An Easter Tradition | Resurrection Rolls

Happy Good Friday, friends! 
Easter, like Christmas, is one of those holidays that can easily get lost in the superficial, and lose all meaning and purpose. It's really important to me to remind our kids of the true meaning of why we celebrate Easter, and not just celebrate with candy and more stuffOne of the activities that I enjoy doing with them are Resurrection Rolls. It's hands-on and visual, but also involves food, so it's big hit.

Resurrection Rolls


It's pretty simple and only involves a few ingredients and they all are symbolism for something deeper. It can be a great time to have deeper discussion with your kids and talk about the symbolism of each ingredient.

  • Marshmallow - Body of Jesus
  • Crescent Roll - Tomb
  • Melted Butter - Oil of embalming
  • Cinnamon & Sugar Mix - Spices for anointing

Resurrection Rolls

  • Prepare a baking sheet with parchment paper and preheat oven to 375º. 
  • Separate the crescent rolls into eight triangles. Combine the sugar and cinnamon. Dip each marshmallow (or if using small marshmallows you may use several) into the butter, then roll in the sugar-cinnamon mixture, and place on a triangle. Pinch the dough around the marshmallow, making sure it's sealed tightly or the marshmallow will leak out. 
  • Once all crescent rolls are filled and sealed, lightly brush remaining butter over the top and sprinkle with sugar-cinnamon mixture. 
  • Bake for 10-15 minutes. Allow to cool then enjoy.

And it is no different for me.  I'm not-so-patiently counting down the days until her show here in Boston and I  spend my days contemplating what I'm going to wear. I  certainly know it will include pink and sequins!

What I Eat in A Day

The beginning of February I visited my doctor for my yearly health physical. I was pretty aware that my weight had gotten a tad out of control but I was not prepared for what I was told. Basically that my "bad" cholestorol had gotten a little too high and I needed to lose 7-10 pounds (more like 20 in my head).


The first week I basically cried and stressed about what to eat and where to even begin. Especially when it came to my coffee. I love my morning creamer and coffee, or coffee and creamer...however you view it, but I knew it had to change.

Eat in a day


I'm now down 7 pounds and feel like I have a little handle on things, so I thought I'd share what I typically eat in a day. Depending on the day, I eat 4-5 small meals a day.  And, for the most part, nothing I eat takes too much time or energy...because who has time to spend on food. 

Morning: 

No Bake Granola Bars

- Proffee (1/2 scoop vanilla protein powder + coffee)

Mid-Morning Snack:

- Chobani No Sugar yogurt w/ KIND Cinnamon Oat Clusters



Dinner:

Salmon Patties & Quinoa
