Mama's Chicken Enchiladas

This is one of my absolute favorite recipes!! My mom has made these enchiladas for years and we eat'em right up every time!


  • 4-5 Chicken breasts or a rotisserie chicken
  • 1-2 cans of cream of chicken (depending on how much chicken your're using)
  •  Sour cream
  • Tortillas
  • Shredded cheese
  • 1 tsp. of chili powder, cumin, and garlic powder
  • Salt and pepper to taste
  • Green chilies are optional

  • Shred the chicken and combine all the ingredients (excepts the cheese) into a bowl

  • Scoop the mixture into the tortillas, add cheese on top, and then roll them up.

  • Spread out the remaining mixture on top of the tortillas and add more cheese on top.

  • Bake at 350 degrees for 25-30 minutes.
