Baked Salmon

Ingredients:
  • 2 cloves garlic, minced
  • 6 tablespoons light olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 2 (6 ounce) fillets salmon
  1. In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
  2. Preheat oven to 375 degrees F.
  3. Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

    At least that's how it feels here in Camden anyway.  We've been enjoying 70 degree weather and beautiful flowers.  I just know we're going to be hit with a major snow storm just as spring break arrives!  But for now I'll keep enjoying the nice afternoon walks with Angel.

    A Pretty Great Weekend

    Saturday mom and Russell came to visit. They bought a crib from Ryan and Candi. When they arrived we went to eat at the White House Cafe...a local favorite! We then went to Ryan and Candi's to get the crib. It was exciting for us to have my parents meet the little ones that we love so much! Of course they were in full form and showed off all of their cuteness.


    Sean had to work a shift from 5-12 Saturday night. So mom, Russ, and I watched Money Ball, played dominoes, and Rack-o. It was nice having them down...it always feels more like home when they're here.

    Sunday mom and Russ headed home around noon. Our friends Thomas and Laura came over so the guys could work on Laura's car. Then Thomas made us some pretty amazing steaks for dinner. Of course we watched some football...and commercials as well.
